INGREDIENTS:

1) Prepare quinoa according to the package instructions.

2) Let stand, covered, for 5 minutes. Fluff with a fork.

INGREDIENTS:

3) Whisk lemon juice and minced garlic in a small bowl.Gradually stir in olive oil.

- green onions

- cucumber

- tomato

- ginger

- quinoa

- herbs

4) Add cucumber, tomatoes, herbs, ginger, and scallions to bowl with quinoa; toss to coat.Season to taste with salt and pepper.
