1) Heat oil and butter in a saucepan over medium heat.
INGREDIENTS:

2) Add onion and saut until translucent.

3) Add mushrooms and stir for about 2 minutes.

4) Add garlic and saut, stirring constantly, until fragrant.

5) Add rice and stir for 1-2 minutes.

- chicken stock
- parsley
- rice
6) Pour in chicken stock and bring to a boil.Reduce heat to low and cover. Allow rice to cook for 35-40 minutes, or until all of the liquid is absorbed. Stir in the parmesan cheese and parsley.
