1) Preheat oven to 400 degrees (convection works best).
INGREDIENTS:

2) Peel and cut potatoes into 1 pieces.
INGREDIENTS:
- olive oil
3) Toss to coat with 2 tablespoon of olive oil.
EQUIPMENT:
- baking sheet
4) Arrange in a single layer on two baking sheets
5) Roast for 35 minutes
INGREDIENTS:
- salt and pepper
- vinegar
- pepper
- cooking oil
6) Mix 2 tablespoons oil, pepper puree, vinegar, salt and pepper to make a dressing
INGREDIENTS:
- sweet potato
- cranberries
- chives
- pecans
EQUIPMENT:
- bowl
7) Combine cranberries, pecans, chives and cooked sweet potatoes in a medium bowl, drizzle with dressing, cover. Refrigerate until chilled.
