Thai-Style Mussels

INGREDIENTS:

- mussels

1) Scrub the outside of the mussels with a brush.

2) Remove and discard the beards.

INGREDIENTS:

- lemon grass

- garlic

- chili pepper

- cooking oil

EQUIPMENT:

- frying pan

- wok

3) Heat the oil in a wok or large pan add garlic, lemongrass and chili. Cook until slightly brown and fragrant.

- mussels

EQUIPMENT:

- wok

4) Add the mussels to the wok and toss well.

INGREDIENTS:

- chinese rice wine

- thai basil

- water

5) Add in chinese rice wine, water, and Thai basil after about 3 minutes.

6) Mix well.

- mussels

7) Put the lid back on for another 1 minutes or so until all the mussels are open (discard any that stay closed).
